Ingredients
  

Beef cut

  • top sirloin
  • flank steak
  • skirt steak

Marinade Ingredients

  • 2-3 chipotle peppers with 1 tbsp adobo sauce
  • 3 cloves garlic
  • 1 small onion chopped
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 lime juiced
  • 2 tbsp olive oil
  • salt and black pepper to taste

Instructions
 

  • In a blender or food processor, combine the chipotle peppers with adobo sauce, garlic, onion, cumin, oregano, smoked paprika, lime juice, and olive oil. Blend until a smooth paste forms. Season with salt and pepper to taste.
  • Place the steak in a shallow dish or resealable plastic bag. Pour the marinade over the steak, ensuring it is fully coated. Cover and refrigerate for at least 4 hours, or preferably overnight.
  • Preheat your grill to medium-high heat. Remove the steak from the marinade and let any excess drip off.
  • Grill the steak for 4-5 minutes per side, or until it reaches your desired level of doneness (135°F for medium-rare). Use a meat thermometer to ensure the internal temperature is correct.
  • Remove the steak from the grill and let it rest for 5-10 minutes. Slice the steak into bite-sized cubes, cutting against the grain for maximum tenderness.
